Sweet Potato Brownies

Recipe: (Serves 10-14 -or however you like to cut it!!)

Ingredients:

  • 2 large peeled sweet potatoes

  • 1 can of chickpeas water

  • 1/2 cup of ground almonds

  • 1/2 cup of raw cacao powder

  • 1/2 cup of almond flour (or coconut/oat/flour of choice)

  • 1/4 cup raw cacao nibs (or substitute for dark chocolate chips ;))

  • 4 tbs of maple syrup

  • 2 tbs melted coconut oil

  • 2 tbs of almond butter (optional)

  • 1 tsp baking powder

  • 1 tsp vanilla

  • Pinch of sea salt

Steps:

  1. Preheat oven: 350 F and line with parchment paper, or grease tin.

  2. Food process, Grind up 1/2 cup of almonds,

  3. Food process: 2 large skinned, and chunked then steamed for 15-20’ +10 dates

  4. Cook 45-50’ or until desired (use fork to test)

  5. Let sit 10’ before cutting to set and drizzle a tiny bit of maple syrup on top!
