Tom Yam Goong
Thai Chicken Noodle Soup
Ingredients:
120 gr White Prawn
200 ml Chicken Stock
5 gr Galangal sliced
2 pc Kaffir leaaves torn into pieces, discard stem
15 gr Straw mushrooms blanched
3 pc Bird eye chilis browned
1 tb Fish sauce
1 tsp Sugar
1 tb Fresh lime juice (the last thing!)
1 Bunch Fresh Coriander for garnish
Steps:
- Pour Stock into small pot and bring to boil 
- Add the sliced lemongrass, kaffir lime leaves, sliced galangal, myshrooms, birds eye chili and bring back to boil 
- Season with fish sauce, lime juice and sugar 
- Keep cooking the soup gently for 2 more minutes before adding the peeled ocean prawns into soup. Cook for 1 more minute before serving hot soup into bowl 
- Garnish the soup with fresh coriander leaves 
Tips
Pound lemongrass before adding to soup to intensify flavor!!
