Banana chocolate chip chia cookies
2 eggs
1 cup plant based yogurt
4 medium bananas
1-2 tbs chia seeds
1/2-1 cup cup oatmeal
1 teaspoon vanilla
pinch of salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 tbs of coconut oil
1/2 cup of cacao nibs or dark chocolate chunks
1 tbs raw cocoa powder
Optional add ins!: 1 scoop of pb or handful of walnuts TOP with pumpkin seeds
STEPS
Bake 375° on parchment paper for 10-12 mins or until very lightly browned on top
Pop them in the fridge after they are cooled and they will be good for 4-5 days!
These cookies are a real crowd pleaser. I can say that they are my favorite snack to have in the house and my teammates, friends and family are obsessed with them! They miraculously taste like banana bread mixed with a muffin mixed with a pancake all at the same time. It is hard to convince people that they don’t have flour or added sugar (other than the choco chips) – of course they are hesitant at first, but they always end up going crazy for them.
They are minimally processed which makes them super easy to digest. They are also fairly low glycemic – so are good for pre-workout or snacking throughout the day and will help sustain your energy without any big energy crashes. I eat them all throughout the day so they always go quickly! Sometimes I will finish an entire batch in 2 days by myself. The recipe is really flexible so I am constantly changing the ratios depending on what I have in the kitchen. You can just taste the batter and adjust accordingly!
Yes these are very clearly breakfast !! This was my attempt to make zucchini oats this morning to bring on the go…when I went to grab the oats I realized I had none. Since I had already mixed up all the ingredients I decided I should just make muffins instead! I really wanted something sweet combined with shredded zucchini -so voila!
Preheat oven to 375°
Recipe:
1 zucchini shredded
4 eggs
2 tbs vanilla
2 tbs melted butter
1 tbs chia
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 scoops unflavored protein powder (you can use whey or plant based doesn’t matter!)
2 tbs ground flax seed
1 1/2 teaspoon baking soda
1/8 salt
3 tbs maple syrup (or honey) which ever you prefer
1/2 cup rinsed uncooked quinoa
Classic open faced toast, sprouted bread style!
2 Slices of sprouted bread (my favorite is sesame ezekiel)
1-2 Tbls of peanut/almond butter
1 sliced banana
1-2 Tbls of chia seeds
This is a good pre-workout morning snack. I am always really hungry when I wake up, but I also don’t perform well on a full stomach. So the combination of protein with complex carbohydrates (plus the crunchiness) leaves me happy but not feeling heavy and ready for a long workout.
