Ingredients:
1 bunch of Parsley
1 bunch of cilantro
1 cup walnuts
2 cups chickpeas
1/4 cup olive oil
4 cloves of garlic
1 small red onion chopped
Salt & pepper
2 tbls of lemon juice
Steps:
Use food processor to finely chop the walnuts
Add all other remaining ingredients to food processor
Run until mixture is well blended and creamy. Add salt and pepper to taste
Spoon the mixture onto parchment paper
Brush lightly with olive oil & Bake in oven at 350 F for 20 minutes
ENJOY (on top of salads, as plain patties, or in a lettuce wrap)
Falafel is one of my favorites – but fried falafel can leave me feeling crummy afterwards. However this spin on an old favorite uses a combination of fresh ingredients and is a really good source of fuel. It serves up great for lunch, dinner, or even as a post-workout recovery meal. These baked falafel are super versatile – I like to bake these up for the week and then add them to salads, eat them with beans and rice, or even use them to top toast! The raw batter alone can serve as a great dip for veggies, pita, etc! Enjoy!
