Ingredients: (Makes 4 servings – 6 oz pieces)
2 lbs wild caught salmon
1/4 cup chopped dried apricots
1/4-1/2 cup chopped walnut
1 tbls of honey
3 tbls butter
1 tsp of salt & 1/2 tsp of pepper
Steps:
Place parchment paper on baking sheet
Pre-heat oven to 350°
Melt butter in skillet over medium heat
Add honey until carmely (about 2 mins)
Add salt and pepper and pour over filets
Sprinkle chopped apricots & walnuts over filets
Cook salmon for about 17-20 mins (depending on thickness) at 350º then 5-6 mins at 400°
***Be careful to check on salmon to avoid overcooking!
Pair with salad or grilled veggies
Refreshing Salad:

1/2 red onion chopped
1 chopped pepper
1 cup cherry tomatoes diced
1 cup diced beets cooked or raw
1 diced avocado
Dressing:
1 tbls olive oil
2 tbls fresh lemon juice
1 tsp balsamic
1 tsp salt & 1/2 pepper
