Apricot Glazed Walnut Covered Salmon over Salad

Ingredients: (Makes 4 servings – 6 oz pieces)

  • 2 lbs wild caught salmon

  • 1/4 cup chopped dried apricots

  • 1/4-1/2 cup chopped walnut

  • 1 tbls of honey

  • 3 tbls butter

  • 1 tsp of salt & 1/2 tsp of pepper

Steps:

  1. Place parchment paper on baking sheet

  2. Pre-heat oven to 350°

  3. Melt butter in skillet over medium heat

  4. Add honey until carmely (about 2 mins)

  5. Add salt and pepper and pour over filets

  6. Sprinkle chopped apricots & walnuts over filets

  7. Cook salmon for about 17-20 mins (depending on thickness) at 350º then 5-6 mins at 400°

    ***Be careful to check on salmon to avoid overcooking!

    Pair with salad or grilled veggies

Refreshing Salad:

  • Head of ledduce

  • 1/2 red onion chopped

  • 1 chopped pepper

  • 1 cup cherry tomatoes diced

  • 1 cup diced beets cooked or raw

  • 1 diced avocado

Dressing:

  • 1 tbls olive oil

  • 2 tbls fresh lemon juice

  • 1 tsp balsamic

  • 1 tsp salt & 1/2 pepper
